Today, I just felt like making a fun, super simple, summer dinner where we could sit in the backyard, listen to Johnny Cash, watch birds dive into the fountain water, and celebrate the fruits of summer’s labors. Thought you might like to share in our evening.
Oh, by the way, this is all to your own tastes and your own liking. Nothing scientific and not an ounce of fanciness.
Dinner Menu and Ingredients (I was channeling my inner-KLou)
Radish “Chips”: As many radishes as you like, thinly sliced and sprinkled with coarse salt.
Burrata Cheese with Heirloom Tomatoes: Burrata cheese. As many heirloom tomatoes as you like, thinly sliced, drizzled with olive oil, sprinkled with coarse salt and pepper. Julienne as much basil as you like and gentle sprinkle on top.
Homemade Crostinis: As much french and/or cibatta bread as you like, thinkly sliced. Brush with olive oil and sprinkle coarse salt on top. Broil until they’re as crispy as you like.
Spinach Salad (not pictured): As much baby spinach, paremessan cheese, and croutons as you like. Toss in light olive oil, freshly squeezed lemon juice, and coarse salt and pepper.
Sauteed Scallops (not pictured): As many scallops as you like, sprinkled with coarse salt and pepper. Sautee scallops in hot oil (I like using olive oil), not smoking but hot enough to sear the bottoms. Let them sautee for about two minutes on one side, then flip and sautee for about a minute or two more. Squeeze fresh lemon juice on top as you turn off the heat.
Watermelon (not pictured): As much chilled, fresh watermelon as you like, cubed.
